Coconut Turmeric Pancakes

My first coconut flour pancakes!!  I have to say, these are far lighter and fluffier than buckwheat ones are.  Buckwheat pancakes are delectable, filling and bready.  Tasting totally like the real deal, grain and all (yet, without any ;-)).  However the coconut pancakes offer a different texture.  I am loving the lightness to them.

Second, turmeric.  What’s being touted as a new superfood and for good reason.  To name just a few of the health benefits potentially earned by consuming this spice: can help prevent breast cancer and skin cancer, a natural painkiller, may aid in boosting metabolism, is used in Chinese medicine to treat depression, etc.  Whoa.  Who knew a single spice could be chock full of such power.  For a full list of way cool benefits, check out this link.

Ready for the easiest and tastiest breakfast you’ve ever had?  Here goes.  Just five ingredients needed.  Super healthy, rich, filling, SO yum.  I eat this one several times a week.  And imagine that after sampling it, you might find yourself doing the same ;-)Delicious and keeps you full for hours afterward.

Green Goddess Zucchini Pesto Pasta

Hi all,

Get excited for this light, healthy summer dish.  Loaded with ingredients to get your skin glowing, that are filling but light, and just totally tasty.  I used noodles made with chick peas, so technically no grains/gluten in my “pasta.”  Do the same for making this one even lighter and healthier.  Normal pasta works just as great too though.  Its up to you, depending on your dietary preferences!

This one will keep you lean and full of energy for those longer summer days (and lesser clothing temperatures ;-p).

Matcha Blueberry Chia Pancakes

Oh man, its the weekend.  And you know what that means…brunching time!!  Weekends are for long, luxurious brunches.  And this unquestionably means pancakes, at least in my world ;-).  A tall stack, ideally doused in maple syrup, couples with eggs and bacon.  These ones are filled with several unique flavorings, all tossed together resulting in this loveliness.  Both to look at as well as for eating.  Pretty, aren’t they?

Matcha.  Blueberries.  Chai Seeds.  Chocolate Chips.  Honey.

Mint Rice with Shrimp and Vegetables

Hi all,

This recipe is actually called Pudina Rice.  Its an Indian recipe, which I had the honor of sampling when my dear friend, Bhakti invited me to dinner last week.  A celebratory and farewell gift for my big impending move.  And man, what a gift it was.  This was DELICIOUS, wow.  Not generally a fan of mint, finding myself hesitant when she told me it was one of the main ingredients.  But, whoa.  It was so yummy, loving every bite and even heaping a second portion onto my plate.

Carrot Cake Pancakes

Happy weekend, all!

These carrot cake pancakes are the epitome of a perfect autumnal breakfast.  I know, I know, its way to early to be talking about fall just yet.  Still reveling within the midst of summer, the season of endless evenings, ice cream, the beach, sundresses and picnicking, and loving every minute.  However, while these do scream autumn, they would be equally as tasty during any season or occasion.  Breakfast in bed…or for dinner.  Sunday brunching.  A summer picnic entrée.  Holing up inside with some wintery comfort food when its snowing.  You name it, these are fabulous anytime.

Blueberry Lavender Poppyseed Pancakes

Happy summer, all!

I know, I know, yet another pancake recipe.  This one is to die for though, whoa.  Having to actively hold myself back from eating several (as I need them for brunch with friends tomorrow ;-)).  These guys are loaded with a variety of fun flavorings and ingredients.  Juicy blueberries.  The barest hint of floral with a sprinkling of lavender.  Poppyseeds, mostly for photogenic purposes.  A dash of cinnamon, nutmeg and ginger.  A capful of vanilla extract.  Get excited, these babies are super yummy.

Who would have thought there was such a thing as 100% healthy, energy infusing, get-glowing-skin muffins?  Packed with antioxidents, omega 3 fatty acids, protein and fiber, these guys offer a lot of bang for your nutritional buck.  Dense, slightly crunchy and lightly sweet.  And.  Low in calories as well as filling.

Almond Flour Chocolate Chip Cookies

Ready for some of the best chocolate chip cookie you’ve ever had?  And now for the sweet shocking twist?  These guys are grain/gluten free, dairy free AND sugar free.  (And if it matters to you, also Paleo).  How awesome is that!?  And the coolest part?  Wait, you mean there’s even more icing on the cake?  Yup.  I was able to eat a (or two) huge spoonful(s) of the raw dough without worrying about raw eggs.  Tasted just like traditional chocolate chip cookie dough.  Absolutely delicious.  Except this one is actually good for you!  Too good to be true?  Nope.  Here’s the recipe.
