Paleo Carrot Cake Pancakes

For about 7 weeks straight last year, I ate these almost every day.  They are so tasty, surprisingly addicting, and they are REALLY healthy.  No gluten, no lactose and they are free of any refined sugar.  I would usually whip up a batch and then consume the entire thing in one sitting.  I recommend these topped with maple syrup and homemade whipped cream.

Now you can really have your (pan)cake and eat it too, no guilt!!!! These (recipe #43) are light in calories and great for you.

Mexican Style Salad

I imagine many of you would agree with me that Mexican food is the bomb.  Enchiladas, tacos, chimichangas, nachos, oh my gosh.  I could go on and on.  Its one of the things I have missed about living in the states.  Access to some dang delicious Mexican food.  For the time being though, I have had to make do and bring the Mexican cuisine to me.

Here is a tasty recipe that can be whipped up quick if you find yourself with a hankering for some.  Its gluten free, lactose free and refined-sugar free.

Bakery Quality Flourless Chocolate Torte

Calling all chocoholics!  Another fudgy, rich, impossibly delicious treat just for you.  This one has a short and sweet ingredient list and is a piece of cake to throw together.  The result is a bakery-quality torte that will have you singing its praises every time you take a bite.  Its that good.

Recipe #41 is one of the few I have posted which is not refined sugar-free, but, this one is worth the splurge.  It is however gluten-free, and can be made dairy free if you were to use lactose-free chocolate (your choice).

Chia Breakfast Pudding

Woo hoo!!!  To break into the big number 4-0 recipe, I decided on this super simple, lightly sweet, lovely chia pudding.  First things first, Chia seeds are AWESOME for you.  They are loaded with antioxidants, fiber, protein, they can improve exercise performance as much as a sports drink can (but without all the added sugar and empty calories), the list goes on.

And yet, this dish tastes similar to Tapioca pudding, YUM!!!  A dessert type dish that’s truly healthy? You bet.  I recommend topping it with any type of berries, as I have in the photo of my own breakfast.  This recipe is lactose-free, gluten-free AND refined sugar-free.

Super easy Sweet Potato Breakfast Skillet

This recipe (#39) is a super cinch and yet, it remains one of my tried and true favorites.  Its surprisingly filling and just satisfying.  You can throw on some bacon or prosciutto if you like, which I do on occasion.  This bumps the dish up a notch making it even more mouthwatering.  To my knowledge, there is nothing that bacon ever tastes bad on.  Am I right?

Watermelon & Feta Salad

This simple, light and lovely dish (#38) is inspired by Amsterdam, the city in which I first sampled it.  Reading the description on the menu, I thought it sounded repulsive.  Watermelon paired with cheese and walnuts!?  Gross.  So on that premise, my friend and I decided to give it a go.

I was shocked.  The flavors paired together perfectly.  The light juicy sweetness of the melon balanced beautifully with the subtly strong cheese.  The walnuts added a fabulous crunch, another layer of texture variety to the dish.  I was surprised to find myself loving it!!

The ingredients needed are simple:

-Watermelon, cut into bite sized cubes.

-Feta cheese

-Walnuts (I imagine pine nuts would also be rather tasty…)

-Fresh Mint

-Balsamic dressing.

Directions: combine the first four ingredients in some semblance that is pleasing to the eye.  Drizzle on a bit of balsamic vinaigrette.  Enjoy!!  This dish is not only delicious but its beautiful, the colors vivid and eye-catching.  Serve it at your next dinner party to give off an adventurous and trendy vibe 😉

Pumpkin Oat Buckwheat Pancakes

Its always the perfect time for all things pumpkin flavored!  This is one of my absolute favorite ingredients to both cook and bake with.  Pumpkin pastapumpkin cheesecakepumpkin pie…I cannot get enough!!  And autumn is not the only ideal time for chowing down on this super good-for-you ingredient.  Much like that silly myth with regard to not wearing white after labor day (who thought of that one, seriously), while pumpkin does tend to be a flavor that goes hand in hand with fall, I think it can and should be eaten in abundance throughout the entire year!!

Here is to luxurious Sunday mornings, brunches that stretch on throughout the morning, breakfast in bed and all things cozy.

This recipe (#36) is refined sugar-free, gluten-free AND lactose-free.  Woo hoo!!!  You can also throw together the batter in less then 10 minutes.  Hows that for outstanding?

Sunflower Butter Energy Bites

Happy New Year, all!!!

For recipe #35, I thought I would venture back into sweet territory.  You guys know I cant stay away for too long 😉

This particular recipe dances on the line between dessert and mildly healthy snack.  It is refined sugar-free, save for the small handful of mini chocolate chips thrown in at the end.  Therefore, if you want 100% sugar free, omit the chocolate chips (or, if you can find sugar free ones, use those).  They are gluten-free and basically lactose-free (again, save for the small amount of chocolate chips).

These are super easy to make, less then 10 minutes, and shockingly they are a favorite among those who have sampled them.  They taste almost like eating raw peanut butter cookie dough.  Mmmmmm.  Really delicious.  Be careful, these guys are rather addictive.  Dont say I didn’t warn you…

Coconut Curry Shrimp Quinoa Bowl

Happy New Years Eve, all!  Edible item #34 is another “beauty bowl” of sorts.  I decided to stick with the both “easy” and “healthy” trend for the moment.  This one is so simple to assemble that actually, its slightly embarrassing.  The taste payoff is a big one, just so yummy when compared with how quick it is to make and then be digging in mere minutes later.

The coconut curry sauce goes AWESOME smothered atop the shrimp, mixed with the subtly nutty taste of the quinoa, the crunch of the bell peppers and onions adding a great texture variety, the mango lending a surprisingly light sweetness, brightening the entire dish.  All of the flavors and textures come together really nicely, balancing one another out and playing well with each other.
