Grain Free Decadent Chocolate Cake

Who doesn’t love chocolate cake?  Well, certainly a few people 😉 but not many.  For a majority, chocolate cake is a quintessential classic yet routinely craved dessert.  Get excited for this decadent version, topped with a whipped chocolate cream.  Super easy to make, and the best part?  Grain/gluten free, and low in sugar!

Why should I care about not eating grains, you ask?  You can read about that in brief here.

So, this chocolate cake is sweet, satisfying, fudgy and delish, though without the grains and with way less sugar than usual.  To me, if you can eat something that’s far better for you yet tastes just as good as they significantly less healthy original, why not go with the version that’s better for your body?  This one is exactly that.  A sweet treat that’s better for you than the original version, though just as tasty.

To segue off my last post under this umbrella titling (the topic of which was “wheat/grains”), the life changing (as well as health changing, and figure changing) power of eating akin to how humans were originally designed to eat…

Why are so many of us (a vast majority of citizens, with the number continuing to climb) overweight? Perpetually lethargic?  Why nowadays do our citizens have a laundry list of diseases and health problems, from cancer, to diabetes, health disease, high blood pressure, and more.  When back during the early days of humans, diseases were rare to nonexistent.  Why, especially Americans, are we all about fitness, getting “ripped” and perpetually dieting, yet as a collective whole our weight continues to climb and climb?  Why, most of the time when people lose weight, do they eventually gain it all back and then some?  Why do we eat huge meals and then find ourselves starving again just a few hours later?

4 Ingredient Chia Berry Pudding

Good morning, all!  Do I have the most awesome light, easy to make, totally tasty and super healthy breakfast (and/or snack) for you.  Chia pudding.  Never heard of chia seeds?  Its time you did.  Chia seeds are AWESOME for you.  They provide your body with (to name a few compelling benefits): omega 3 fatty acids, are rich in antioxidants, and they provide fiber, calcium, and iron to your body.  Plus, they can reduce risk of obesity, diabetes, heart disease, and lower overall mortality risk.

So Yum and Healthy Carrot Banana Pancakes

Hi all,

As you can see, I’m having a bit of a pancake moment yet again ;-).  No surprise, eh?  These pancakes are one of my best variety for several reasons: grain/gluten free, lactose free, and no refined sugar.  Also, super easy to make, light and fluffy, low in calories, and ultra healthy.  Did I mention they are lightly sweet (naturally) and totally delicious?

They taste awesome topped with berries and maple syrup.  Get excited, and enjoy!

The perfect anytime entrée.  Whether for a quick and tasty breakfast, a sugar free but satisfying dessert-like snack, an easy meal to make while camping, or refusing to sacrifice your love of pancakes in the mornings while wishing to keep it on the leaner side, these are for you 😉

Blueberry Ricotta Pancakes

Inspired by and adapted from the book “Hungry for Change: Ditch the Diets, Conquer the Cravings, and Eat Your Way to Lifelong Health,” by James Colquhoun and Laurentine Bosch (which was excellent, by the way.  I recommend reading this if you are interested in the topics of health and nutrition.  Its an easy, quick but informative and inspiring read), I give you these fluffy, light, absolutely delicious blueberry ricotta pancakes.

Grain/gluten free, and low in sugar, these are basically great for you.  Yet they totally hit that pancake hankering spot one feels on weekend brunching mornings (at least that’s my quintessential weekend (and actually, weekday as well) morning ;-)).

Oh man, are these things addicting.  Lightly sweet, with a chewy texture, melt-in-your-mouth yumminess right here.  These coconut macaroons can pass for Paleo, are grain/gluten free, dairy free, and free of refined sugar.  They are easy to make.  And they are damn good, so get excited 😀

Orange Zest and Spice Baked Donuts

Hi all,

Who doesn’t love donuts?  I cant think of many people.  That’s because donuts are the bomb.  A quintessential American treat.  If made right, they are fluffy, melt-in-your-mouth, lightly sweet, and ideally topped with a swirling of frosting.  The perfect amount for a treat sized snack.  Not so much that you feel ill after consuming one, just enough to feel satisfied and oh so happy.

Behold: my donuts are made with zero grains/gluten, they have no refined sugar, and are dairy free (save for two eggs, but if you like, these can be substituted with egg beaters- found in the grocery store.  An egg substitute).

These babies have a unique, lovely flavor to boot.  Orange zest combined with a plethora of spices (a touch of cinnamon, a lot of ground cloves, and a tad of ginger).  The end result is awesome.  And, I threw the dough together in just ten minutes.  So while the ingredients may sound slightly complex to some who haven’t tried working with nut flours just yet (and no, the donuts do not taste like nuts), its super easy.  I think you’ll be pleasantly surprised.

Healthy Gingerbread

Despite Christmas being over, I still think its “that time” of year.  Meaning, for gingerbread.  To me, this treat isn’t relegated merely to Christmas but is an aptly enjoyed whole winter treat 😀  However, traditional gingerbread is loaded with wheat, dairy and sugar.  I found and adapted this healthier but just as delectable version for your tasting pleasure.  Its super easy to whip together, its grain/gluten free, dairy free and quite low in sugar.  How bout that.  And its tastes sweet, lightly spiced and delish, just like the real deal.
