Mostly Healthy Matcha Truffles

Happy Sunday, all!

As you know, Matcha is having a moment right now.  Majorly trendy and for good reason.  Its amazing for your health.  Boosting all sorts of benefits such as: helping to clear skin, strengthening immune system, increasing energy.  The list goes on.

Matcha also tastes awesome when paired with chocolate, as well as with berries.  To name two of the fabulous pairings with this superfood discovered within my own cooking and baking experiments.  Matcha French Toast and Matcha Pancakes with Raspberry and Chocolate Chips, two bombastic dishes within the last couple of months.

Swedish Visiting Cake

The story behind this traditional Swedish dessert is that upon having spotted someone at the end of the lane making their way to your home, you could throw this cake together and have it coming hot out of the oven, just in time for their arrival.

This cake is simple, lovely, REALLY tasty, lightly sweet.  Oh man.  I was shocked by how delicious it was, considering the simplicity with regard the ingredients.  Don’t take my word for it though.  Whip up the batter, toss the cake in the oven and enjoy a slice with your next mug of tea or coffee.  You will thank me later.

 

Sweden
A few snapshots from my own trip to Stockholm, Sweden for a week, six months ago in August, 2016.  I ate delicious food, embarked on a boat ride to one of the far most islands that makes up Sweden, took hundreds of photos, wandered narrow, winding lanes, the list goes on.  Sweden boosts fantastical, whimsical, laid back and romantic vibes.

Melt-in-your-mouth Pumpkin Cookies

Hi all,

I know, with Spring underfoot, you are likely thinking of flavors more along the lines of fruity, light, juicy, and with just the barest hints of sweet.  I am too.  I am awaiting the summery season with bated breath.  However in the meantime, there are still several more chilly winter(ish) weekends remaining and for those, I am a strong advocate for all things pumpkin.  One of my favorite ingredients with which to cook.  Pumpkin is the bomb.  You can make SO many mouthwatering things with this delicious addition.  The list is endless, but to name a few: Pumpkin cookies, pumpkin cheesecake, pumpkin pancakes, pumpkin lattes, pumpkin macaroni and cheese, pumpkin bread, pumpkin risotto, etc.

Pumpkin is not only awesome for your health but its homey and delicious.  In fact on its own, pumpkin doesn’t have a strong taste, so its easy to stir into loads of different things without being overwhelmed by intense flavor.  Pumpkin is a more mild form of deliciousness.

Blueberry & Blackberry Tart with Vanilla Cream

As the days gradually grow warmer, granted they are taking their sweet time in doing so, I am a firm believer that milder temperatures call for something fruity and light.  Fruity and light coincides perfectly with the ushering in of the summer season.

Behold, my berry tart.  A super cinch to make and, if this is any validation, the entire thing was polished off in one sitting at my tea party this past weekend 😉

Earl Gray Brownie Pudding

Matcha Cake with Buttercream & Raspberry Frosting

Hi all!  I realize its been a while since a recipe has appeared on this blog.  But good things come to those who wait, and I have several recipes, the results from my kitchen experiments that took place over this past weekend, ready and about to come your way.

I have been on a major kick with regard to all things Matcha, which those of you who have read through my other recipes are aware of.  Not only for the fact that I love green tea, but also because its amazing for your health!!

I was skeptical when baking up this particular Matcha cake, worried it wouldn’t come out tasting as delectable as I hoped.  I was especially anxious because I would be serving it to friends with high expectations 😉  However I was relieved to find this cake immediately claimed as the favorite sweet on the table!!!
